Vegetable Stew with Beef

This beef stew features some of our prime June/July veggies like carrots, potatoes, leeks, onions and celery.

Ingredients:

  • 1 lb Bellair Stew beef

  • celery

  • potatoes

  • carrots

  • onion/leek or both

  • garlic

  • bay leaf

  • 1 qt chicken stock

  • 1/2 or 1 qt diced tomatoes/tomato puree

Heat up oil in stew pot. Sear beef, do in batches if needed. I coated mine in a mixture of flour, salt and pepper but that isn't necessary. Set beef aside and add celery and onion, cook until translucent, add garlic and cook until fragrant. Add all the ingredients including the beef and cook until the vegetables are cooked through.
