Miso-Lime-Ginger Dressing
Hey folks, Amanda here! I’ve been on a mission lately to improve my dressing and sauce-making skills and my current favorite is this Miso-Lime-Ginger dressing. It’s extremely versatile — use it as a marinade, a salad dressing, or easily adjust/add ingredients to your taste.
To be honest, I usually just eyeball the amounts, but below is a basic rundown of ingredient ratios:
1/4 cup sesame oil (or toasted sesame oil)
1 heaping TBSP miso paste
1 lime (zest & juice)
1/2” piece fresh ginger (or more if you want more hot ginger-y taste)
1 TBSP Maple Syrup (adjust more or less to your liking)
1/2 TBSP Apple Cider Vinegar
Whisk all of the above ingredients together for a basic dressing or marinade. The miso paste is pretty salty on its own. If you find that it’s too salty, add a little more lime or ACV. You could also add a TBSP peanut butter (and decrease the sesame oil a little) to make this a yummy peanut-lime dressing.
Great ways to use this dressing:
on plain salad greens, like Bellair’s spicy Mr. Mustard Mix! Fresh mustard greens are SO nutritious, but if the sharp bite of fresh mustard greens is too much for you, this dressing really tempers the spiciness. If you don’t want to eliminate the mustard bite, decrease the acids (lime and ACV)
add great flavor to a big salad or grain bowl recipe
as a marinade for chicken legs or thighs
as a sauce for stir fry, etc.
