Lemon Curd

Bellair Eggs from our pastured laying hens. The yolks are a beautiful gold color and packed with nutrition.

This Lemon Curd recipe is from our greenhouse manager Livia, and features Bellair eggs. She also made these fun Spring/Easter-inspired Egg Cookies The 'yokes' are lemon curd topped with "golden berries," aka Peruvian ground cherries like the ones we grow in the pick-your-own field.

Ingredients:
3 large lemons, juiced
1 cup sugar
3 Bellair eggs
1/4 cup butter, cut into small chunks
1 Tbsp lemon zest

Mix together lemon juice, sugar, and eggs in a saucepan over medium heat. Once thoroughly mixed, add chunks of butter and lemon zest. Continue stirring until curd has thickened. Remove from heat and let cool.
