Bellair BCT (Bacon-Cabbage-Tomato)

When it comes to tomato sandwiches, everyone has their favorite preparation:"white bread and duke's" or "salt and sourdough."

For me, I decided to go with a BCT -- Bacon, Cabbage, Tomato. Our ‘Tendersweet’ cabbages (flattened sphere shape) are an excellent option for eating fresh - they’re aptly named :)

First, I made a dressing (instructions below) and then I dressed my super-thin sliced cabbage with the dressing while toasting my bread, slicing my tomatoes, and frying my bacon.

I served my BCT with a delicious and simple shaved cucumber and summer squash salad.

For the sandwich:

Bread of your choice
Bellair Bacon or Shoulder Bacon
Bellair Cabbage Slaw with dressing
Bellair Tomatoes

For the dressing: Dukes or other mayo (1/3 cup), garlic clove, 1 egg yolk, squeeze of mustard, salt, pepper, Gathered Threads herb seasoning, lemon juice. Stream in 1/4 cup olive oil while blending for a delicious half-homemade aioli!
