Freeze your Greens

 
 

Freezing greens
I use this method from Bon Appetit
Wash greens WELL (nothing more annoying than gritty greens)
Batch-blanch in boiling water 15 seconds
Batch-shock in ice water (optional, but lends a bright green color)
Squeeze out moisture (use this liquid for soup stock or to cook rice in!)
Ball greens into baseball-size portions (or any size you like)
Arrange on sheet trays, freeze
Once frozen, put into freezer bag or other container, removing as much air as possible.
