Honestly, if berry season could last forever I would never get tired of them. With the wonderful berry share from AgriBerry, plus the fruit share from Henley’s Orchard, we truly are spoiled for choice when it comes to delicious fruit. Even though it’s all amazing just as it is, I think we can all agree that adding butter and sugar makes it even tastier. Here’s my super simple recipe for a fruit cobbler that you can easily change to fit whatever fruit you get in your shares during the summer, or what you pick up at the farmers market.

I start by making my favorite drop-biscuit recipe and add 1/4 cup of brown sugar to make it nice and sweet. Then I mix another 1/4 cup of sugar and a couple tablespoons of of cubed butter with two pints worth of fruit (can be peaches, apples, strawberries, blackberries….). Drop the biscuits on top and bake in the oven at 375 degrees until the biscuits are golden brown!

I use the local Wade’s Mill Flour for this recipe and it takes it to the next level. I haven’t completely mastered that flour and I definitely have had some mixed results, but in this application I’ve found it to work wonderfully, though it needs more liquid compared to other flours I’ve used for drop biscuits.
