Fresh Grain Bowls
Grain bowls are easy, versatile, and incredibly wholesome. Prep everything, mix it all together, and enjoy!
Cooked quinoa (sub bulgur, brown rice, polenta, barley, etc.)
Roasted winter squash (sub pumpkin or potatoes)
Raw onion (sub Gathered Threads pickled onion)
Raw cubanelle peppers (sub whatever hot or sweet pepper you like and roast if you want)
Raw radish (roast them before adding if you don't like spice)
Sautéed radish green (sub cooked or raw mizuna from this week's share)
Sautéed chanterelle mushrooms -- I found a few over the weekend and I'm really grateful for those as well (sub any other mushroom or some Bellair breakfast sausage for protein and bulk)
I used a homemade dressing of lemon juice, "Better than Balsamic" vinegar, olive oil, salt and pepper. I wish I had had some feta or goat cheese around. That really would have made it. But there’s always next time!
