Lemony and Tomato-y Brothy Beans
1 small onion, diced
2 cloves garlic, sliced
1 tbs lemon thyme (for best results use good quality, like from Gathered Threads)
2 slices lemon peel
3 small salad turnips (or 1 regular turnip) sliced thin
2 carrots sliced thin
1 pint crushed tomatoes or similar
1 pint (pref. homemade) chicken broth
1 large can white beans (or similar quantity dry beans, soaked overnight)
Serve with: crusty bread, a hunk of cheese, and kale -- either sliced or in microgreen form!
Saute aromatics and add lemon thyme and lemon peel when onions are translucent and fragrant. Add in the turnip and carrot slices and stir. Add in tomatoes, broth, beans and stir. Simmer for flavors to meld, then serve.
