Sweet Potato Sandwich

I made this sandwich, inspired by one of the offerings at Belle Cville. I didn't have olives on hand, but I would add them in a heartbeat if I did, and it would be closer to the original idea. 

First, prepare Gathered Threads' Chimmichurri Mix by adding vinegar and olive oil to the dried herbs. Let it sit while you make the rest. Roast slabs of sweet potato in your oven. While those are roasting, thinly slice radish and onion and toast some local bread. Chop up some greens (I used Bellair choy sum) and dress heavily with the chimmichurri. Spread Caromont chevre on one side of the bread and layer the rest of the ingredients on. I like to wrap up potentially messy sandwiches (and in this case, especially since I took these on a picnic), but it actually held together til the last bite! Best eaten with Martin's Potato Chips.
